Pork Spareribs with Lemongrass (Travers De Porc A La Citronelle)

INGREDIENTS:
1 cup chopped shallots (about 6) 3/4 cup fish sauce (nam pla) 1/2 cup minced fresh lemongrass
1/2 cup water 9 garlic cloves, chopped 2 tablespoons sugar
2 tablespoons chili-garlic sauce 4 pounds pork spareribs (about 2 racks), each cut into 2-rib sections nonstick vegetable oil spray



1 Whisk chopped shallots, fish sauce, minced lemongrass, 1/2 cup water, chopped garlic, sugar and chili-garlic sauce in large bowl to blend. Add spareribs to mixture and marinate 2 hours, turning often.
2 Spray grill rack with nonstick vegetable oil spray or brush with oil. Prepare barbecue (medium heat). Remove spareribs from marinade, shaking off excess. Pour marinade into small saucepan; bring to boil. Grill ribs until crisp, brown and cooked through, turning often to prevent burning and brushing with marinade, about 25 minutes total. Cut ribs between bones into individual ribs.
