| INGREDIENTS: | ||
| 1 (10 to 10-1/2 pound) turkey, quartered | 4 small cloves garlic, crushed | 2 teaspoons salt |
| 1-3/4 cups lemon juice | 1 cup vegetable oil | 1/2 cup chopped onion |
| 2 teaspoons ground thyme | 2 teaspoons pepper | |
| 1 | Place turkey in a large shallow container. Mash garlic with salt in a medium bowl, using a fork. Add remaining ingredients, stirring well; pour over turkey. Cover and refrigerate at least 8 hours, turning turkey occasionally. |
| 2 | Remove turkey from marinade, reserving marinade. Prepare fire in a covered grill. Place turkey, skin side down, on grill. Cover with lid, and grill over medium coals 2 hours or until done, turning every 15 minutes. Baste turkey with marinade during last 30 minutes of grilling time. Let stand 10 to 15 minutes before slicing. |
