Bulgur Wheat Salad (Kisir)

INGREDIENTS:
1-1/2 cups bulgur wheat 1 Tbsp tomato paste 4 scallions, trimmed and chopped
a handful of fresh mint, chopped a handful of fresh parsley, chopped juice of 1 lemon
salt and ground black pepper 2 Romaine lettuce leaves, torn



1 Place the bulgur wheat in a bowl and cover with boiling water. Soak for 5 minutes, or until the water is absorbed.
2 Stir in the tomato paste. When thoroughly mixed, add the scallions and herbs.
3 Pour over the lemon juice, taste, and season with salt and pepper. Serve garnished with the torn lettuce leaves.
