| INGREDIENTS: | ||
| 1-1/2 cups bulgur wheat | 1 Tbsp tomato paste | 4 scallions, trimmed and chopped |
| a handful of fresh mint, chopped | a handful of fresh parsley, chopped | juice of 1 lemon |
| salt and ground black pepper | 2 Romaine lettuce leaves, torn | |
| 1 | Place the bulgur wheat in a bowl and cover with boiling water. Soak for 5 minutes, or until the water is absorbed. |
| 2 | Stir in the tomato paste. When thoroughly mixed, add the scallions and herbs. |
| 3 | Pour over the lemon juice, taste, and season with salt and pepper. Serve garnished with the torn lettuce leaves. |
