Rita's Grilled Scallops and Shrimp with Bacon

INGREDIENTS:
8 slices lean bacon 1 pound sea scallops 1 pound large shrimp, shelled and deveined, tails left on



1 Blanch bacon in boiling water for about 3 minutes to remove some of the fat and to partially cook the bacon. Using either metal skewers or wooden ones that have been soaked in water, pierce one end of a bacon strip, then skewer a scallop. Bring bacon over top of scallop and skewer. Skewer a shrimp and bring bacon over top. Fill skewers, alternating bacon, scallops, and shrimp. Grill over hot charcoal or broil for about 8 minutes or until bacon is crisp.
