| INGREDIENTS: | ||
| generous 1/2 cup olive oil | 1 onion, chopped | 1 lb French beans, trimmed |
| 1 large fresh tomato, skinned and chopped | 1 Tbsp tomato paste | salt and ground black pepper |
| chopped fresh parsley, to garnish | ||
| 1 | Heat the oil in a skillet and fry the onions until transparent, then add the beans, and fry together for a few minutes. |
| 2 | Cover with cold water, then add the chopped tomato. Bring to a boil and stir in the tomato paste, then reduce the heat, and simmer for 20 minutes, or until the beans are cooked. Drain, retaining about 1 tablespoon of the cooking juice. |
| 3 | Transfer the beans to a glass dish and add the retained juice. Season to taste. Chill before serving, garnished with parsley |
