French Beans Cooked in Olive in Olive Oil (Zeytinyagli Fasulye)

INGREDIENTS:
generous 1/2 cup olive oil 1 onion, chopped 1 lb French beans, trimmed
1 large fresh tomato, skinned and chopped 1 Tbsp tomato paste salt and ground black pepper
chopped fresh parsley, to garnish



1 Heat the oil in a skillet and fry the onions until transparent, then add the beans, and fry together for a few minutes.
2 Cover with cold water, then add the chopped tomato. Bring to a boil and stir in the tomato paste, then reduce the heat, and simmer for 20 minutes, or until the beans are cooked. Drain, retaining about 1 tablespoon of the cooking juice.
3 Transfer the beans to a glass dish and add the retained juice. Season to taste. Chill before serving, garnished with parsley
