Sesame Fried Chicken (Off Sum-Sum)

INGREDIENTS:
6 skinless chicken breasts 70g/2-1/2 oz sesame seeds 70g/2-1/2 oz plain flour
1 teaspoon salt freshly ground black pepper 1 teaspoon paprika
1 large egg 3 tablespoons water oil, for shallow frying



1 Trim any fat from the chicken pieces and dry with kitchen paper. Coat the chicken pieces lightly in the mixture, shaking off excess. Beat the egg and water in a shallow bowl. Dip the chicken into the egg mixture, then coat again with the sesame seed mixture. Place the chicken on a tray, cover and refrigerate for 30 minutes if time permits.
2 Preheat the oven to 180C/350F/gas mark 4.
3 Heat 5mm/1/4-inch of oil in a frying pan over a medium heat. Add the chicken and shallow fry for 2 minutes on each side until light golden brown-take care not to brown the coating.
4 Arrange the chicken in a single layer in a baking dish and bake for about 25 minutes until cooked through. Serve hot.
