| INGREDIENTS: | ||
| 1 Tbsp butter or margarine | 4 chicken quarters | 1 onion, chopped |
| 1 garlic clove, crushed | 1 Tbsp tomato paste | generous 1/2 cup dry white wine |
| 1 bouquet garni | 3 bay leaves | salt and ground black pepper |
| 1 red bell pepper, seeded and chopped | 8 oz button mushrooms | |
| 1 | Melt the butter or margarine in a saucepan and fry the chicken portions until evenly browned. Add the onion and garlic, and fry for 2 minutes more, then stir in the flour. |
| 2 | Pour in the stock with the tomato paste. Mix well, then add the wine and the herbs. Season to taste, cover, and cook over low heat for 1 hour. Add the bell pepper and the mushrooms, and simmer for 15 minutes more before serving. |
