Chicken Burgers (Tavuk Kofte)

INGREDIENTS:
2 tbsp margarine 3 tbsp flour 1/2 cup milk
1 cup shredded Cheddar cheese 3 egg yolks salt and ground black pepper
9 oz cooked chicken, cut into strips olive oil, for shallow frying FOR THE COATING: 1 cup flour
2 eggs 2 cups fresh bread crumbs



1 Heat the margarine in a saucepan and stir in the flour. Stirring constantly, gradually add the milk. Then, still stirring, add the cheese, egg yolks, and seasoning. Cook for 5 minutes, stirring all the time.
2 Turn off the heat and add the chicken. Mix well, then chill for 2 hours.
3 Heat the oil in a skillet. Sift the flour onto a plate, whisk the eggs in a good-size bowl, and spread the bread crumbs out on a second plate.
4 Take walnut-size pieces of the chicken mixture and form into patties. Dip first into the flour, then into the egg, and, finally, into the bread crumbs. Fry evenly, drain, and serve.
