Sugar Syrup Drink (Sherbet)

INGREDIENTS:
SUGAR SYRUP: 1/4 cup sugar 1 cup water SHERBET: 2 Fl oz cherry juice
2 fl oz red grape juice 2 fl oz mulberry juice or exotic fruit juice 2 fl oz grapefruit juice
1 fl oz sugar syrup carbonated lemonade or soda water 1 few sprigs of mint
a slice of lemon



1 To make the sugar syrup: Dissolve the sugar in water over a moderate heat. Bring to a boil and simmer for 5 minutes. Allow to cool and then pour into a sterilized container. Cover and store in the refrigerator.
2 To make the sherbet: Shake all the ingredients together with a little crushed ice. Pour into a long glass and top up with chilled soda water or lemonade.
