Rice with Tomatoes (Domatesli Pilav)

INGREDIENTS:
2-1/4 cups long grain rice, washed and drained 1/4 stick butter 3 fresh ripe tomatoes, skinned and chopped
3-1/2 cups chicken stock 1 tsp tomato paste salt and ground black pepper



1 Soak the rice in hand-hot water, allow to cool, and drain.
2 Heat the butter in a saucepan and fry the tomatoes for a few minutes. Pour the chicken stock over and bring to a boil.
3 Add the rice, stir in the tomato paste, and season to taste.
4 Cover and cook over medium heat for 15 minutes, then reduce the heat, and simmer for 10 minutes more, until the liquid is absorbed.
