| INGREDIENTS: | ||
| 2-1/4 cups long grain rice, washed and drained | 1/4 stick butter | 3 fresh ripe tomatoes, skinned and chopped |
| 3-1/2 cups chicken stock | 1 tsp tomato paste | salt and ground black pepper |
| 1 | Soak the rice in hand-hot water, allow to cool, and drain. |
| 2 | Heat the butter in a saucepan and fry the tomatoes for a few minutes. Pour the chicken stock over and bring to a boil. |
| 3 | Add the rice, stir in the tomato paste, and season to taste. |
| 4 | Cover and cook over medium heat for 15 minutes, then reduce the heat, and simmer for 10 minutes more, until the liquid is absorbed. |
