Tahini Sauce (Tarator Bi Tahini)

INGREDIENTS:
2 cloves garlic salt 225ml/8 fl oz tahini (sesame paste)
125ml/4 fl oz lemon juice 2-3 tablespoons cold water pita bread, to serve



1 Chop the garlic roughly and mix with 1/2 teaspoon of salt. With the top of a knife, squash the garlic and mix to a smooth paste.
2 Combine the garlic paste, tahini, lemon juice and cold water in a bowl. If it is too thick, add a little more water until a sauce-like consistency is reached. Add about 1/2 teaspoon of salt to taste. Serve as a dip with bread, or as a sauce.
