| 2 lbs ham steak | 1 onion, chopped | 1 tomato, chopped |
| 1 cup Madeira or Burgundy | 1 clove | 1 bay leaf |
| 1 cup meat stock | 2 tbls flour | 2 tbls butter |
| 1 | Remove rind from ham. Place in a casserole the ham, onion, tomato, wine, seasoning and meat stock and bake in a hot oven (400) until tender and browned (about 1/2 hour). Remove from casserole. Add flour, blended with melted butter, to the drippings to prepare a rich gravy, adding extra stock and wine, if desired. Blend well and pour over ham and serve. Serve with Mashed Potatoes or Glazed Chestnuts. |
