Ham in Madira or Burgundy (Schinken in Madeira oder Burgunder)

INGREDIENTS:
2 lbs ham steak 1 onion, chopped 1 tomato, chopped
1 cup Madeira or Burgundy 1 clove 1 bay leaf
1 cup meat stock 2 tbls flour 2 tbls butter



1 Remove rind from ham. Place in a casserole the ham, onion, tomato, wine, seasoning and meat stock and bake in a hot oven (400) until tender and browned (about 1/2 hour). Remove from casserole. Add flour, blended with melted butter, to the drippings to prepare a rich gravy, adding extra stock and wine, if desired. Blend well and pour over ham and serve. Serve with Mashed Potatoes or Glazed Chestnuts.
