| INGREDIENTS: | ||
| 4 legs lamb, boned and all visible fat and gristle removed | 6 lbs onions, chopped | black pepper |
| dried crushed oregano | 1 liter Sauterne or cooking Sherry | juice of 1-1/2 lemons to flavor and tenderize |
| 1 | Cut lamb into 1 to 1-1/2" cubes. Place layer of onions on bottom of large non-aluminum pan. Place meat cubes evenly on top. Sprinkle with black pepper and oregano to taste. Mix in Sauterne or Sherry and lemon juice. Cover and refrigerate up to 3 days, mixing meat every 8 hours. Thread meat cubes onto skewers through centers. Grill over hot coals until done, frequently turning skewers so that meat will cook evenly. |
