INGREDIENTS:
4 legs lamb, boned and all visible fat and gristle removed 6 lbs onions, chopped black pepper
dried crushed oregano 1 liter Sauterne or cooking Sherry juice of 1-1/2 lemons to flavor and tenderize



1 Cut lamb into 1 to 1-1/2" cubes. Place layer of onions on bottom of large non-aluminum pan. Place meat cubes evenly on top. Sprinkle with black pepper and oregano to taste. Mix in Sauterne or Sherry and lemon juice. Cover and refrigerate up to 3 days, mixing meat every 8 hours. Thread meat cubes onto skewers through centers. Grill over hot coals until done, frequently turning skewers so that meat will cook evenly.
