Couscous with Almonds

INGREDIENTS:
1/4 cup butter or margarine 1 medium onion, chopped 1-1/2 cups uncooked couscous
3 cups chicken broth 1/2 teaspoon salt 1/2 teaspoon pepper
1/2 cup slivered almonds, toasted 1/2 cup currants



1 Melt butter in a medium saucepan over medium heat; add chopped onion, and saute 2 minutes or until tender.
2 Add couscous, chicken broth, salt, and pepper to onion, stirring well. Bring mixture to a boil; reduce heat, and simmer 2 minutes. Remove from heat; cover and let stand 10 minutes or until liquid is absorbed. Stir in almonds and currants. Fluff with a fork before serving.
