| INGREDIENTS: | ||
| 1/4 cup butter or margarine | 1 medium onion, chopped | 1-1/2 cups uncooked couscous |
| 3 cups chicken broth | 1/2 teaspoon salt | 1/2 teaspoon pepper |
| 1/2 cup slivered almonds, toasted | 1/2 cup currants | |
| 1 | Melt butter in a medium saucepan over medium heat; add chopped onion, and saute 2 minutes or until tender. |
| 2 | Add couscous, chicken broth, salt, and pepper to onion, stirring well. Bring mixture to a boil; reduce heat, and simmer 2 minutes. Remove from heat; cover and let stand 10 minutes or until liquid is absorbed. Stir in almonds and currants. Fluff with a fork before serving. |
