| INGREDIENTS: | ||
| 2-1/2 lbs chicken | 1 t salt | 1/4 t pepper |
| 1 cup onions, chopped | 1 clove garlic, crushed | 1 T butter |
| 1/4 cup catsup | 1/3 cup orange marmalade | 2 T soy sauce |
| 1 cup chicken stock | 2 t dry mustard | 1 green pepper, cut in strips |
| 4 cups hot cooked rice | ||
| 1 | Season chicken with salt and pepper. Bake 30 minutes at 350 F. Saute onions and garlic in butter until soft. Add catsup, marmalade, soy sauce, chicken stock, and mustard. Simmer 15 minutes. Spoon over chicken. Bake 20 minutes. Stir in green pepper. Cook 5 minutes. Serve over steamed rice. |
