Pecan Peach Muffins

INGREDIENTS:
1-1/2 cups all-purpose flour 1/2 cup granulated sugar 2 teaspoons baking powder
1 teaspoon ground cinnamon 1/4 teaspoon salt 1/2 cup butter or margarine, melted
1/4 cup milk 1 egg 2 medium peaches, peeled, diced (about 1 cup)



1 Preheat oven to 400 F. Paper-line 12 (2-1/2-inch) muffin cups. Prepare Topping; set aside.
2 In large bowl, combine flour, granulated sugar, baking powder, cinnamon and salt. In small bowl, combine butter, milk and egg until blended. Pour into flour mixture, stirring just until moistened. Fold in peaches. Spoon into muffin cups. Sprinkle Topping over batter. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan.
3 TOPPING: In small bowl, combine 1/2 cup chopped pecans, 1/3 cup packed brown sugar, 1/4 cup all-purpose flour and 1 teaspoon ground cinnamon. Add 2 tablespoons melted butter or margarine, stirring until mixture is crumbly.
