Ham Loaf with Mustard Sauce

INGREDIENTS:
1 pound ground cooked ham 1 pound ground pork 1 cup tomato juice
1 cup fine, dry breadcrumbs 3/4 cup milk 2 eggs, beaten
Mustard Sauce MUSTARD SAUCE: 2 eggs, beaten 1/4 cup sugar
2 tablespoons dry mustard 1 tablespoon all-purpose flour 1/4 teaspoon salt
1 cup milk 1/2 cup warm vinegar



1 Combine ground ham, ground pork, tomato juice, breadcrumbs, milk, and beaten eggs in a large bowl; mix well. Spoon mixture into a 9x5x3-inch loafpan.
2 Bake at 350 F for 2 hours or until done. Serve with Mustard Sauce.
3 MUSTARD SAUCE: Combine beaten eggs, sugar, dry mustard, flour, salt, and milk in a medium saucepan; stir well. Bring just to a boil over medium heat, stirring constantly. Slowly add vinegar; cook, stirring constantly with a wire whisk, until mixture is thickened. Yield: 2 cups.
