| 2 lbs fresh mullet | 2 t salt | 1 t sugar |
| 1 T oil | 2 T soy sauce | 4 T chung choy, finely chopped |
| 4 T fresh ginger, chopped | 4 T green onions, chopped | Chinese parsley |
| lemon wedges | 2 T oil | |
| 1 | Sprinkle salt over fish. Allow to stand for a few minutes in a shallow dish. Combine sugar, oil, and soy sauce. Pour over fish. Top with chung choy, ginger, and onions. Steam for 15 minutes. Heat oil. Pour over fish. Garnish with Chinese parsley and lemon wedges. |
