Pick fresh and very tender fava beans. Wash them and remove strings. Cut into 1" pieces, set aside. Braise meat in a large pot until golden brown. Put cut fava beans in, whole cloves of garlic, black pepper and toss a few minutes. Add water just about 1" below the fava beans. Bring to a boil and taste for salt. Cook on low heat for 1 to 1-1/2 hours until fava beans are tender and juice has gone down. Serve fava bean stew with yogurt on top of it. If you wish, sprinkle yogurt with garlic salt or powder. Serve rice or bulghour pilaf with it. |
