| INGREDIENTS: | ||
| 12 bananas | lemon juice | 1-1/2 cups grated fresh coconut |
| HOT LEMON SAUCE: 1/2 cup sugar | 1 T cornstarch | 1/4 t salt |
| 1 cup hot water | 1 t grated lemon rind | 3 T lemon juice |
| 2 T butter | ||
| 1 | Cut each banana in half. Roll in lemon juice, then in coconut. Place in baking pan. Bake at 400 for 15 minutes. |
| 2 | Meanwhile, combine sugar, cornstarch, salt, and hot water. Cook 15 minutes, stirring constantly. Remove from heat. Stir in lemon rind, juice, and butter. Pour over bananas. |
