Baked Bananas

INGREDIENTS:
12 bananas lemon juice 1-1/2 cups grated fresh coconut
HOT LEMON SAUCE: 1/2 cup sugar 1 T cornstarch 1/4 t salt
1 cup hot water 1 t grated lemon rind 3 T lemon juice
2 T butter



1 Cut each banana in half. Roll in lemon juice, then in coconut. Place in baking pan. Bake at 400 for 15 minutes.
2 Meanwhile, combine sugar, cornstarch, salt, and hot water. Cook 15 minutes, stirring constantly. Remove from heat. Stir in lemon rind, juice, and butter. Pour over bananas.
