Papaya Chiffon Pie

INGREDIENTS:
3 eggs, separated 1/4 cup sugar 2 T lemon juice
1 t grated lemon rind 3 T hot water 1/2 T unflavored gelatin
2 T cold water 1-3/4 papaya pulp 1/4 cup sugar
9" pie shell baked



1 In a saucepan beat yolks until thick. Add sugar, lemon juice, lemon rind, and water. Cook over low heat until thickened. Soak gelatin in cold water. Stir into hot mixture until dissolved. Add papaya. Cool. Beat egg whites until foamy. Slowly beat in sugar, until meringue forms peaks. Fold in papaya mixture. Pour into pie shell. Chill until firm.
