Classic Creme Brulee

INGREDIENTS:
1 pt cream 1 cup milk 5-1/2 Tbsps sugar
7 egg yolks



1 Mix cream, milk and 3-1/2 Tbsps sugar together in a heavy-bottomed saucepan and bring to a boil. While cream mixture is heating, mix egg yolks and remaining sugar together in a separate bowl, beating until smooth. When cream has reached a boil, slowly whisk cream into egg mixture.
2 Divide into 4 shallow custard dishes. Place in a water bath and bake for 30 to 35 minutes at 275. Remove to cool immediately.
3 When ready to serve, sprinkle remaining 2 Tbsps sugar on top of brulee to caramelize under the broiler or with a butane torch.
