| INGREDIENTS: | ||
| 1 pt cream | 1 cup milk | 5-1/2 Tbsps sugar |
| 7 egg yolks | ||
| 1 | Mix cream, milk and 3-1/2 Tbsps sugar together in a heavy-bottomed saucepan and bring to a boil. While cream mixture is heating, mix egg yolks and remaining sugar together in a separate bowl, beating until smooth. When cream has reached a boil, slowly whisk cream into egg mixture. |
| 2 | Divide into 4 shallow custard dishes. Place in a water bath and bake for 30 to 35 minutes at 275. Remove to cool immediately. |
| 3 | When ready to serve, sprinkle remaining 2 Tbsps sugar on top of brulee to caramelize under the broiler or with a butane torch. |
