Cheese Pudding (Kasepudding)

INGREDIENTS:
6 tbls butter 1 cup flour 1/4 lb cheese, grated
1 cup milk 4 eggs, separated salt
nutmeg



1 Melt butter, add flour, stir in grated cheese. Thin with milk and cook briefly. Let cool. Stir in egg yolks, season well and fold in well-beaten egg whites. Turn into greased pudding form, cover, set in water and cook over moderate heat for 40 minutes. Serve with spinach.
