Cut pineapple in half lengthwise. Retain leaves, cutting through them. Remove fruit. Be careful not to pierce shell. Dice 1/2 cup pineapple. Measure 1/4 cup juice. (Reserve remaining pineapple for use in another recipe.) Saute onion in butter until soft. Stir in sugar, vinegar, soy sauce, and mustard. Combine cornstarch with pineapple juice until smooth. Stir into onion mixture. Bring to boil, stirring constantly. Add pineapple, water chestnuts, and beans. heat thoroughly. Heat pineapple halves at 350 for 10 minutes. |
