| INGREDIENTS: | ||
| 2 cups ata or whole-wheat flour | 1 tablespoon ghee | 3/4-1 cup hot water |
| 1/4 teaspoon salt | vegetable oil for deep-frying | |
| 1 | Make a soft dough from the flour, ghee, water, and salt. Let it stand to soften and absorb fully for half an hour. |
| 2 | Divide into flour, then divide each four into four-it's the easiest way of getting 16 similar-sized pieces. |
| 3 | Shape each into a ball, then roll out to 4-inch disks. |
| 4 | Preheat oil or a deep-fry to 375 F and immerse one disk in the oil at a time. It should puff up quickly. Turn when it does, and remove after 30 seconds. Serve at once. |
