Deep-Fried Unleavened Bread (Puri)

INGREDIENTS:
2 cups ata or whole-wheat flour 1 tablespoon ghee 3/4-1 cup hot water
1/4 teaspoon salt vegetable oil for deep-frying



1 Make a soft dough from the flour, ghee, water, and salt. Let it stand to soften and absorb fully for half an hour.
2 Divide into flour, then divide each four into four-it's the easiest way of getting 16 similar-sized pieces.
3 Shape each into a ball, then roll out to 4-inch disks.
4 Preheat oil or a deep-fry to 375 F and immerse one disk in the oil at a time. It should puff up quickly. Turn when it does, and remove after 30 seconds. Serve at once.
