| INGREDIENTS: | ||
| 3 lbs russet potatoes, peeled and halved | 2 Tbsps sweet butter | salt to taste |
| 1 tsp white pepper | 1-1/2 cups heavy cream | 6 oz fresh goat cheese, room temperature |
| 1/4 lb bacon, cooked crisp and crumbled | 1/2 cup scallions, chopped | |
| 1 | Boil the potatoes in salted water until cooked through. Drain well. Place the potatoes in a large mixing bowl and mash thoroughly with an electric mixer. Beat in the butter, salt and white pepper. Add the heavy cream until smooth. Using a rubber spatula, stir in goat cheese, bacon and scallions. Serve immediately. |
