| INGREDIENTS: | ||
| 1 small celeriac | 1 bay leaf | 1/2 tsp allspice |
| 1/2 cup white wine vinegar | 1 medium apple | 1/4 cup sour cream |
| 1 Tbs mustard | ||
| 1 | Peel and wash the celeriac, then cut it into fine strips. Bring a pot of water to boil, the bay leaf, allspice, and salt and pepper. Add the julienned celeriac and boil lightly till tender, about 10 minutes. Drain the celeriac, place in a small salad bowl or deep plate, pour on the vinegar, and let cool. |
| 2 | Peel the apple and then grate it onto the cooled celeriac. Add the sour cream, mustard, and salt and freshly ground black pepper to taste. |
