Celeriac Salad

INGREDIENTS:
1 small celeriac 1 bay leaf 1/2 tsp allspice
1/2 cup white wine vinegar 1 medium apple 1/4 cup sour cream
1 Tbs mustard



1 Peel and wash the celeriac, then cut it into fine strips. Bring a pot of water to boil, the bay leaf, allspice, and salt and pepper. Add the julienned celeriac and boil lightly till tender, about 10 minutes. Drain the celeriac, place in a small salad bowl or deep plate, pour on the vinegar, and let cool.
2 Peel the apple and then grate it onto the cooled celeriac. Add the sour cream, mustard, and salt and freshly ground black pepper to taste.
