Chicken Cooked with Lentils and Vegetables (Chicken Dhansak)

INGREDIENTS:
3/4 cup red lentils (masoor dhal) 3/4 cup water 4 tablespoons vegetable oil
1 teaspoon turmeric 8 tablespoons Curry Masala Sauce 1 pound chicken breast, skinned and cubed
2 tablespoons Curry Paste Akhni Stock or water 1-2 pieces canned pineapple, drained and chopped
3-4 cups diced mixed vegetables (carrot, potato, peas, eggplant, beans, okra, tomato, bell pepper) 1 tablespoon sugar salt to taste
1 tablespoon Garam Masala



1 Sift through the lentils and rinse them, then cook by boiling in 3/4 cup water. They will be cooked sufficiently in about 30 minutes.
2 Meanwhile, heat the oil in a karahi, stir-fry the turmeric for a few seconds, then add a spoonful of curry sauce. Take a quarter of the chicken and stir-fry it, searing it and coloring it yellow. Add more sauce, then next quarter of chicken and so on until all the sauce and chicken are used. Add the paste and a little stock of water.
3 Simmer for about 10 minutes, then check to see whether the chicken is cooked. When it is, combine with the remaining ingredients, and mix well. When simmering it is ready to serve.
