Fried Cheese (Saganaki)

INGREDIENTS:
Kasseri cheese, 1/3 inch thick (1/3 pound) egg 1 tablespoon milk
flour olive oil for pan frying brandy
lemon juice



1 Cut a slice of kasseri cheese about 1/3 inch thick. Mix the egg with the milk. Dip the cheese into the egg mixture. Then dip it into flour. Fry in a bit of oil in a heavy frying pan on medium heat until golden brown. Then turn. Flame with brandy if you wish, but be careful. Add a squirt of lemon juice when the flame dies down.
2 Serve with crackers or crusty French bread.
