INGREDIENTS:
1-1/2 lbs Monterey Jack cheese, shredded 1 (8 oz) container cottage cheese 2 eggs, beaten
1/2 C chopped parsley 1 C clarified butter 1 lb filo dough



1 Combine Jack cheese, cottage cheese, eggs and parsley in large bowl. Mix well. Set aside. Butter large baking pan. Lightly brush 1 filo sheet with butter. Line pan with sheet. Repeast process with half the filo dough, 1 sheet at a time, brushing each with melted butter. (Keep remaining sheets covered with damp towel to prevent drying out.) Spoon cheese filling evenly over filo. Repeat buttering and layering process with remaining filo, brushing first and top layers generously with butter. Before baking, cut into squares with sharp knife. (Boereg can be wrapped airtight and frozen at this point. When ready to use, thaw 1 hour and then bake as directed.) Bake at 400 F. until golden brown 20-30 minutes. Remove from oven. Cut again through scored marks. Arrange boereg on platter in 1 layer to avoid sogginess.
