INGREDIENTS:
12 medium yellow onions 6 tablespoons olive oil 2 tablespoons wine vinegar
3 cloves garlic, peeled and crushed chopped parsley salt and fresh-ground black pepper to taste



1 Wrap the unpeeled onions individually in aluminum foil. Push into the coals of the fire or barbecue, and leave for 30 to 40 minutes. Or place in a 375 oven for 1 hour.
2 Make a dressing of the remaining ingredients.
3 Unwrap the onions carefully, remove the skins, and serve hot, with a little of the dressing poured over each one.
