Beef in Beer

INGREDIENTS:
1 kg/2 lb rump steak 2 onions 125g/4 oz field mushrooms
2 crushed cloves garlic 2 rashers bacon 1 bay leaf
30g/1 oz butter 30g/1 oz flour 1/2 litre/1 pint strong ale
salt and frshly ground black pepper 1 tbsp red wine vinegar



1 Trim the meat of all fat and cut it into 1-inch cubes. Cut the bacon into small dice. Slice the onions.
2 Melt the butter in a large frying pan, brown the cubes of meat and turn these into an oven-proof casserole. Fry the bacon until it is crisp, add the onions and let them acquire a golden colour. Slice and lightly fry the mushrooms; add them to the meat.
3 Sprinkle the flour over the contents of the casserole, add the seasonings, stir everything together well and cover with the beer. Cook in the oven at 170C/325F/gas mark 3 for 2 hours.
4 Just before serving, check the seasoning and stir in the wine vinegar.
