Trim the meat of all fat and cut it into 1-inch cubes. Cut the bacon into small dice. Slice the onions. |

Melt the butter in a large frying pan, brown the cubes of meat and turn these into an oven-proof casserole. Fry the bacon until it is crisp, add the onions and let them acquire a golden colour. Slice and lightly fry the mushrooms; add them to the meat. |

Sprinkle the flour over the contents of the casserole, add the seasonings, stir everything together well and cover with the beer. Cook in the oven at 170C/325F/gas mark 3 for 2 hours. |

Just before serving, check the seasoning and stir in the wine vinegar. |
