INGREDIENTS:
2 medium onions, finely chopped 3 medium tomatoes, finely chopped 1 fresh hot green pepper, seeded and finely chopped
1 clove garlic, chopped 2 tablespoons finely chopped parsley salt, freshly ground pepper
1/2 cup olive oil 3 tablespoons red wine vinegar



1 In a bowl combine the onions, tomatoes, pepper, garlic, and parsley, mixing lightly. Season with salt and pepper. In a small bowl beat together the oil and vinegar with a fork, then pour the mixture over the vegetables. Stir to mix.
