Corn Relish (Acharang Mais)

INGREDIENTS:
1 teaspoon salt 1/2 cup sugar 1/2 cup apple cider vinegar
1 cup cooked or canned corn 1 medium-size onion, diced 1 medium-size green pepper, diced
2 teaspoons hot pepper sauce 1/4 cup finely diced pimento



1 Combine salt, sugar and vinegar in saucepan. Bring to a boil. Add corn, onion and green pepper and boil for 5 minutes. Stir in hot pepper sauce and pimento to taste. Refrigerate. Serve cold.
