Cape Breton Scottish Oat Cakes

INGREDIENTS:
1-1/4 C sugar 2 C flour 1 t salt
1/2 t baking soda 2 C bran flakes 2 C rolled oats
1 T baking powder 1-1/4 C lard 1/2 C boiling water



1 Add soda to boiling water and let stand until cool. Mix together flour, baking powder, salt, bran, oats, and sugar. Cut in lard and add water and soda. Roll out thin on floured board and cut into squares. Bake at 425 F for 10 minutes.
