INGREDIENTS:
DOUGH: 1/2 C (scant) shortening, melted 1/2 C lukewarm water 4 C flour
dash salt oil for frying FILLING: 1 lb Muenster or Monterey Jack cheese, grated
2 eggs, beaten chopped parsley to taste



1 DOUGH: To prepare dough, stir together shortening and lukewarm water in large bowl. Gradually stir in flour and salt, mixing and kneading until soft dough is formed, adding additional water if needed. Cover dough and let it rest while you prepare filling.
2 FILLING: To prepare filling, combine cheese, eggs and parsley in bowl. Mix well; set aside.
3 Divide dough into 2 balls. Work with 1 ball at a time. Roll dough out on lightly floured surface until paper-thin. Brush surface generously with melted butter. Roll up dough, then cut into 1-2" pieces (walnut-size). Shape each into a ball. Roll each into 6-8" circle. Repeat with remaining dough. Place filling on half of each circle. Fold top half over filling and seal edges. Heat oil in large. Add boeregs, a few at a time, and fry until golden brown on both sides. Drain on paper towels. Serve hot.
