| INGREDIENTS: | ||
| 3 medium-size chorizos or other spicy sausage, cut in 1-inch rounds | 12 medium-size new potatoes, peeled and cut in half | 1 large onion, cut in half and the halves thickly sliced |
| 1 large green bell pepper, seeded and cut into thin strips | 3 tablespoons pure Spanish olive oil, plus extra for garnish | salt and freshly ground black pepper to taste |
| 1 | Place the chorizos, potatoes, onion, bell pepper, and oil in a large saucepan with a tight-fitting lid, add a small amount of cold water to barely cover, and bring to a simmer over very low heat. Simmer, covered, until the potatoes are tender, 20 to 25 minutes. Drain, then shake the pan over low heat for 2 minutes to evaporate any remaining moisture. Transfer to a serving platter, drizzle with olive oil, if desired, correct the seasonings, and serve hot. |
