Cornflakes Meatloaf

INGREDIENTS:
1 pound lean ground beef 1 pound ground veal or lean pork 2-1/2 cups cornflakes, crushed
1 small onion, chopped fine 1/2 cup chopped parsley 3 eggs
salt, pepper and garlic powder to taste 3/4 cup tomato sauce, ketchup or barbecue sauce



1 Preheat the oven to 350 degrees. With your hands, mix together ground meat, cornflakes, onion and parsley in a large bowl. In another bowl, whisk eggs, salt, pepper, garlic powder and tomato sauce. Pour over meat mixture, and work in with your hands.
2 Transfer to a lightly greased 9-by-5-inch loaf pan. Bake 1 hour, or until juices run clear (160 degrees if using a meat thermometer). Let stand 10 minutes, pour off any fat, and slice to serve.
