| INGREDIENTS: | ||
| 2 Spanish onions | 60g/2 oz butter | 25g/2 oz flour |
| a pinch of curry powder | 1/4 litre 1/2 pint cold water | 125 ml/ 1/4 pint double cream |
| salt and freshly ground pepper | ||
| 1 | Finely slice the onion and cook until transparent in the butter. Season with the curry powder, salt and pepper. Add the flour and stir in well. |
| 2 | Gradually add the water, stirring all the time, and bring the sauce to the boil. Cook for 15 minutes. Pass the sauce through a blender, Mouli or hair sieve. |
| 3 | Add the cream, re-heat, correct the seasoning and serve. |
