Onion Sauce

INGREDIENTS:
2 Spanish onions 60g/2 oz butter 25g/2 oz flour
a pinch of curry powder 1/4 litre 1/2 pint cold water 125 ml/ 1/4 pint double cream
salt and freshly ground pepper



1 Finely slice the onion and cook until transparent in the butter. Season with the curry powder, salt and pepper. Add the flour and stir in well.
2 Gradually add the water, stirring all the time, and bring the sauce to the boil. Cook for 15 minutes. Pass the sauce through a blender, Mouli or hair sieve.
3 Add the cream, re-heat, correct the seasoning and serve.
