| INGREDIENTS: | ||
| 4 eggs | 2 cups sugar | 1/2 cup oil |
| 1/2 cup shortening | 2 teaspoons baking soda dissolved in 1 cup strong coffee | 2 cups honey |
| 7 cups sifted flour | 1-1/2 teaspoons baking powder | 1/2 teaspoon salt |
| 1 teaspoon ground ginger | 1 teaspoon ground cloves | 1 teaspoon cinnamon |
| 1 8-ounce can crushed pineapple | ||
| 1 | Preheat oven to 325 F. Grease 3 loaf pans and line with waxed paper. |
| 2 | Cream eggs and sugar. Add oil, shortening, coffee with dissolved baking soda, and honey. Mix together well. Set aside. |
| 3 | Sift four, baking powder, salt, ginger, cloves, and cinnamon. Add to honey mixture. Mix in crushed pineapple. |
| 4 | Divide batter equally among the loaf pans. |
| 5 | Bake for 1 hour and 15 minutes, until a cake tester comes out nearly clean. |
