New Year's Honey Cake

INGREDIENTS:
4 eggs 2 cups sugar 1/2 cup oil
1/2 cup shortening 2 teaspoons baking soda dissolved in 1 cup strong coffee 2 cups honey
7 cups sifted flour 1-1/2 teaspoons baking powder 1/2 teaspoon salt
1 teaspoon ground ginger 1 teaspoon ground cloves 1 teaspoon cinnamon
1 8-ounce can crushed pineapple



1 Preheat oven to 325 F. Grease 3 loaf pans and line with waxed paper.
2 Cream eggs and sugar. Add oil, shortening, coffee with dissolved baking soda, and honey. Mix together well. Set aside.
3 Sift four, baking powder, salt, ginger, cloves, and cinnamon. Add to honey mixture. Mix in crushed pineapple.
4 Divide batter equally among the loaf pans.
5 Bake for 1 hour and 15 minutes, until a cake tester comes out nearly clean.
