| 10 oz chocolate (Valrhona equatorial chocolate is recommended) | 6 Tbsps soft unsalted butter | 3 eggs yolks, beaten |
| 1/4 cup granulated sugar | 4 egg whites, whipped | CREME ANGLAISE: 1 vanilla bean |
| 1 pt milk | 8 egg yolks | 1 cup sugar |
| 1 | CREME ANGLAISE: Split the vanilla bean and boil in the milk over low heat. Whip the egg yolks with the sugar until it forms a ribbon. Slowly add the milk to the egg yolks and place above boiling water. Whip the creme until it coats the back of a spoon. Strain and chill. |
