Chocolate pate with Creme Anglasie

INGREDIENTS:
10 oz chocolate (Valrhona equatorial chocolate is recommended) 6 Tbsps soft unsalted butter 3 eggs yolks, beaten
1/4 cup granulated sugar 4 egg whites, whipped CREME ANGLAISE: 1 vanilla bean
1 pt milk 8 egg yolks 1 cup sugar



1 CREME ANGLAISE: Split the vanilla bean and boil in the milk over low heat. Whip the egg yolks with the sugar until it forms a ribbon. Slowly add the milk to the egg yolks and place above boiling water. Whip the creme until it coats the back of a spoon. Strain and chill.
