| INGREDIENTS: | ||
| 1 onion, minced | 1 garlic clove, crushed | 3 T oil |
| 1 cup water | 2 cups pineapple juice | 1 cup rice, uncooked |
| 1/2 t ginger, ground | 1 cup pineapple chunks | 1/2 cup macadamia nuts or peanuts |
| 1 cup yogurt | ||
| 1 | Saute onion and garlic in oil until soft. Add water and juice. Bring to boil. Add rice and ginger. Cook over low heat, covered, 40 minutes. If liquid is not absorbed, cook longer. Mix pineapple, nuts, and yogurt. Heat. |
