INGREDIENTS:
1 head Bibb lettuce 1 head Belgian endive 1 small head iceberg lettuce
2 cups tender spinach leaves 2 cups cherry tomatoes, halved 2 shallots, sliced thin
2 tablespoons chopped chives 2 hard-boiled eggs, chopped



1 Wash the greens in ice water, drain, and pat dry. Tear greens, assemble salad, and place in the refrigerator to crisp while you make the dressing.
