Fritters with Rum and Honey

INGREDIENTS:
1/2 cup vanilla-flavored soy milk 1 teaspoon dry yeast 2 large egg yolks
2 tablespoons olive oil 2 tablespoons sugar 2 tablespoons dark rum
1 teaspoon salt 2-1/2 cups all purpose flour vegetable oil (for deep-frying)
1/2 cup honey



1 Heat vanilla-flavored soy milk in small saucepan over low heat until warmed to 110 F. Pour soy milk into large bowl. Sprinkle dry yeast over; let stand until yeast dissolves, about 10 minutes. Mix in egg yolks, olive oil, sugar, dark rum and salt. Gradually mix in all purpose flour by 1/2 cupfuls. Knead dough in bowl until smooth, about 3 minutes. Cover bowl; let dough rest 30 minutes. 2 Using floured hands, shape dough into 1-inch-diameter balls. Add enough oil to heavy large deep saucepan to reach depth of 3 inches. Attach deep-fry thermometer. Heat oil to 350 F. Working in batches, fry 6 fritters at a time until golden brown, turning often, about 3 minutes. Using slotted spoon, transfer to several layers of paper towels to drain.
3 Place warm fritters in large bowl. Pour honey over. Stir to coat evenly. Arrange fritters on platter and serve.
