Bacon and Egg Casserole

INGREDIENTS:
15 hard-cooked eggs, sliced salt and pepper 12 slices of bacon, fried crisp and cut into 1-inch pieces
2 cups chopped baked ham, do not use boiled ham 1-1/2 cups crushed potato chips 1 tablespoon margarine
1/2 cup chopped onion 6 tablespoons margarine 6 rounded tablespoons flour
3 cups milk 1/2 teaspoon salt dash of pepper
1 teaspoon dry mustard 2 cups grated Cheddar cheese



1 Preheat oven to 350 degrees F. Butter generously a 9x13-inch baking dish. Place half of eggs in prepared dish. Sprinkle lightly with salt and pepper. Add in layers half of bacon, ham and potato chips. Repeat layers. In a small saucepan, saute onion in 1 tablespoon margarine. In a medium saucepan over medium heat, melt 6 tablespoons margarine. Add flour; stir until smooth. Gradually add milk; cook until sauce thickens; stir constantly. Add 1/2 teaspoon salt, dash of pepper, mustard and 1-1/2 cups cheese; reserve 1/2 cup of cheese. Stir until cheese melts and is well-blended. Pour sauce over all. Sprinkle with reserved cheese. Bake 20 minutes.
