| 2 Maine lobsters, 1 lb each, cooked, chilled, minced | 1 cucumber, diced | 1 yellow bell pepper, diced |
| 1 red bell pepper, diced | 1/2 sweet onion, diced | 2 ripe tomatoes |
| 1 small jalapeno chile, minced | 3 Tbsps balsamic vinegar | 6 Tbsps olive oil |
| salt and freshly ground pepper | pinch of salt | juice of one lemon |

| 1 | Combine all ingredients in a large bowl. Adjust seasonings, add chile to taste. |
