Hobo Casserole

INGREDIENTS:
1 cup packaged precooked rice 2 tablespoons butter or margarine 2/3 cup thinly sliced onion
1 10-3/4 ounce can chicken gravy 1 8-ounce can diced carrots, drained 1-1/2 cups diced cooked chicken or 12 ounce can chicken
1 tablespoon melted butter or margarine 3 tablespoons cornflake crumbs



1 Heat oven to 350 F. Cook rice according to package directions. Melt the 2 tablespoons butter in a skillet over moderately low heat (about 225 F.). Add onion and cook until tender. Stir together rice, onion, gravy, carrots and chicken. Spoon into a 1-quart casserole. Mix together the 1 tablespoon melted butter and the cornflake crumbs. Sprinkle over top. Bake 40 to 45 minutes.
