Whole Wheat Bread

INGREDIENTS:
2 packages dry yeast 1/2 cup warm water 1/4 cup packed brown sugar
dash of ginger 2-1/2 cups warm water 1/2 cup packed brown sugar
4 cups flour 4 teaspoons salt 1 cup hot water
1/2 cup margarine, melted 8 cups whole wheat flour



1 In a large bowl, dissolve yeast in 1/2 cup warm water to which 1/4 cup brown sugar and ginger have been added. Set aside 5 minutes. Add 2-1/2 cups warm water, 1/2 cup brown sugar, 4 cups flour and salt. Beat until smooth. Cover; let rise until light and double in bulk. Stir down. Add 1 cup hot water, margarine and only as much of whole wheat flour as is needed to make a very soft yet a kneadable dough. Turn dough out onto lightly-floured board or pastry cloth. Cover with inverted bowl; let rest 10 minutes. Knead until smooth, 5 or 6 minutes. Place dough in well-greased bowl; turn to grease surface. Cover; let rise until double in bulk. Punch dough down and turn onto well-floured board or pastry cloth. Grease generously three 9x5x3-inch loaf pans. Divide dough into thirds; shape each portion into a loaf and place in prepared pans. Cover lightly; let rise until almost double in bulk. Preheat over to 350 degrees F. Bake 30 to 35 minutes or until loaves are golden brown and test done.
