| INGREDIENTS: | ||
| 2 pounds cooked and peeled shrimp, large | 1 red onion, diced | 3/4 cup vegetable oil |
| juice of 2 lemons | juice of 2 limes | 1/2 cup champagne vinegar |
| 1/2 cup ketchup | 6 tablespoons chopped parsley | 2 cloves minced garlic |
| 2 tablespoons minced ginger | 1 orange, thinly sliced | salt and pepper to taste |
| 1 | Combine all ingredients in a zipper-top plastic bag and refrigerate overnight. Remove orange slices, put in a pretty bowl and serve cold with long toothpicks (with plenty of napkins!). |
