Marinated Maine Shrimp

INGREDIENTS:
2 pounds cooked and peeled shrimp, large 1 red onion, diced 3/4 cup vegetable oil
juice of 2 lemons juice of 2 limes 1/2 cup champagne vinegar
1/2 cup ketchup 6 tablespoons chopped parsley 2 cloves minced garlic
2 tablespoons minced ginger 1 orange, thinly sliced salt and pepper to taste



1 Combine all ingredients in a zipper-top plastic bag and refrigerate overnight. Remove orange slices, put in a pretty bowl and serve cold with long toothpicks (with plenty of napkins!).
