Thoroughly wash the beans and put them into a heavy saucepan. Cover with cold water and soak them for about 4 hours. Add enough water to cover the beans by about 1 inch, bring to a boil, lower the heat, and simmer the beans, covered, until they are tender, about 2 hours. Heat the bacon fat in a skillet and add the onion and garlic. Saute until the onion is soft, then scoop out a cupful of the beans with their cooking liquid and add to the skillet. Continue cooking, at the same time mashing the beans over low heat until the mixture is smooth and thick. Stir the mixture into the pot with the beans, season to taste with salt and pepper, and cook, uncovered, over very low heat for 30 minutes longer. |
